Chicory italiko is also known as Italian dandelion or ‘cicoria rossa italiana’, which means red Italian chicory. It gets its name from its strong red leaf stalks, which are surrounded by dark green, serrated leaves. This salad is therefore more reminiscent of dandelion or rocket than chicory. With its slightly bitter taste and vibrant colours, chicory italiko is a lively contrast both in the garden and on the plate.
